How it works

Unlike a regular electric hob, induction only heats the pot or pan placed on it, using a magnetic field โ€” the surface itself stays largely cool to the touch. This requires pots and pans with a ferromagnetic base (a magnet should stick to it). Each zone is adjusted with a dial or touch screen, usually from 1 to 9 or in degrees. A "residual heat" indicator light stays on as long as the zone remains hot after cooking.
